Ingredients
  

  • 2 cups Fat-free Greek yogurt
  • 1 cup Unsweetened almond milk or your preferred low-calorie milk
  • 1/4 cup Low-calorie sweetener such as stevia, monk fruit, or 1/4 cup honey
  • 1 teaspoon Vanilla extract
  • Pinch Salt
  • Optional: 1/2 cup Fresh fruit such as berries or mango puree, 2 tablespoons Unsweetened cocoa powder (for chocolate flavor), 1/4 cup Chopped nuts or dark chocolate chips (for mix-ins)

Instructions
 

Prepare the Base:

  • In a medium mixing bowl, combine the fat-free Greek yogurt, almond milk, sweetener, vanilla extract, and a pinch of salt. Whisk or mix with a hand mixer until smooth and creamy. Taste the mixture and adjust sweetness if needed.

Flavor the Ice Cream:

  • If you prefer flavored ice cream, add your desired ingredients at this stage. For chocolate ice cream, add cocoa powder. For fruit-flavored ice cream, blend in pureed fruit. Mix thoroughly.

Freeze the Mixture:

  • Pour the ice cream mixture into a shallow, freezer-safe container. Smooth the top with a spatula and place it in the freezer.

Churn (Optional):

  • If you have an ice cream maker, follow the manufacturer’s instructions to churn the ice cream until it reaches a soft-serve consistency. Then, transfer to the freezer to firm up for 2-3 hours.

Freeze and Serve:

  • If not using an ice cream maker, allow the ice cream to freeze for 4-6 hours, stirring every hour to break up any ice crystals and ensure smoothness. Once set, scoop and serve in bowls or cones.

Store:

  • If you have leftovers, store the ice cream in an airtight container or cover it with plastic wrap in the freezer for up to 2 weeks.

  • Texture Tips: For creamier texture, churn the ice cream using an ice cream machine. If not using a machine, stir the mixture every hour while it freezes to prevent ice crystals.
