Ingredients
  

For the Chicken:

  • 2 tbsp olive oil
  • 4 boneless skinless chicken breasts
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika

For the Sauce:

  • 1 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • ½ cup sun-dried tomatoes chopped
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes optional, for spice
  • 2 cups fresh spinach

For Garnishing:

  • 2 tbsp fresh basil chopped
  • 1 tbsp grated parmesan cheese optional

For Serving:

  • Pasta rice, or crusty bread

Instructions
 

Step 1: Sear the Chicken

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the chicken breasts with salt, black pepper, garlic powder, and paprika.
  • Sear the chicken for 5–6 minutes per side, until golden brown and cooked through. Remove and set aside.

Step 2: Make the Creamy Sauce

  • In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant.
  • Pour in heavy cream, chicken broth, and parmesan cheese, stirring to combine.
  • Add sun-dried tomatoes, Italian seasoning, and red pepper flakes.
    Let the sauce simmer for 3–4 minutes until slightly thickened.

Step 3: Combine Everything

  • Stir in fresh spinach and cook for 1–2 minutes until wilted.
  • Return the chicken to the skillet, coating it in the creamy sauce.
  • Simmer on low heat for 2–3 minutes to allow flavors to meld.

Step 4: Garnish & Serve

  • Sprinkle with fresh basil and extra parmesan cheese.
  • Serve hot over pasta, rice, or with crusty bread.

  • Lighter Option: Substitute heavy cream with half-and-half or coconut milk.
  • Make It Extra Cheesy: Stir in ¼ cup of shredded mozzarella for a richer sauce.
  • Add More Veggies: Mushrooms, zucchini, or cherry tomatoes work well.
