Equipment

  • 1 Ice Cream Molds (Silicone or Plastic)
  • 2 Mixing Bowls
  • (1) Whisk
  • 1 Saucepan
  • 1 Spoon or Ladle
  • 1 Parchment Paper or Wax Paper
  • 8–10 Popsicle Sticks
  • 1 Freezer (flat space for freezing)

Ingredients
  

For the Ice Cream Base:

  • 2 cups Heavy Cream
  • 1 can 14 oz Sweetened Condensed Milk
  • 1 teaspoon Vanilla Extract
  • Green Food Coloring a few drops, or as needed
  • Optional Flavorings: 1 tsp Mint Extract 1–2 tsp Matcha Powder, or 2 tbsp Pistachio Paste

For the Green Chocolate Coating:

  • 1 cup White Chocolate Chips
  • 1 tablespoon Coconut Oil
  • Green Gel Food Coloring a few drops

Optional Decorations:

  • Candy Eyes for decoration
  • Chocolate Drizzle optional
  • Crushed Cookies or Sprinkles optional

Instructions
 

Prepare the Ice Cream Base:

  • In a large mixing bowl, combine the heavy cream, sweetened condensed milk, and vanilla extract. Whisk until smooth. Add a few drops of green food coloring and stir until the mixture reaches your desired shade of green. For additional flavor, you can mix in mint extract, matcha powder, or pistachio paste.

Fill the Molds:

  • Pour the green ice cream mixture into your ice cream molds, filling them to the top. Insert the popsicle sticks into the center of each mold. Place the molds in the freezer and allow them to freeze for at least 4 hours or until the bars are completely firm.

Make the Green Chocolate Coating:

  • In a saucepan, melt the white chocolate chips and coconut oil over low heat, stirring frequently until smooth. Once melted, add a few drops of green gel food coloring and mix well until the chocolate is fully coated in a bright green hue.

Dip the Ice Cream Bars:

  • Once the ice cream bars are frozen solid, remove them from the molds. Carefully dip each bar into the melted green chocolate, coating all sides evenly. Allow excess chocolate to drip off before placing the bars on a tray lined with parchment paper.

Decorate and Freeze:

  • Optionally, decorate the bars with candy eyes, chocolate drizzle, or crushed cookies. Place the bars back in the freezer for 30 minutes to let the chocolate coating set completely.

Serve and Enjoy:

  • Once the chocolate coating is firm, your Shrek Ice Cream Bars are ready to enjoy! Serve them immediately or store them in the freezer for later.
