Equipment

  • 1 baking sheet or tray
  • 1 Parchment Paper or Wax Paper
  • 1 ice cream scoop or spoon
  • 1 butter knife or small spatula (for separating cookies)
  • 1 spoon or small spatula (for smoothing ice cream)
  • 1 airtight container (for storing)

Ingredients

  • 12 Oreo cookies
  • 2 cups 480 ml ice cream (flavor of choice, softened)
  • Optional toppings chocolate chips, sprinkles, crushed Oreos, chopped nuts

Instructions

Prepare the Oreo Cookies:

  • Gently twist apart the Oreo cookies, leaving the cream intact or removing it depending on your preference. Set the cookies aside.

Soften the Ice Cream:

  • Let the ice cream soften for 5-10 minutes at room temperature to make it easier to scoop and spread.

Assemble the Ice Cream Sandwiches:

  • Take one Oreo cookie and scoop a generous amount of softened ice cream onto the center. Place a second Oreo cookie on top and gently press it down to spread the ice cream to the edges.

Freeze the Sandwiches:

  • Place the assembled sandwiches on a parchment-lined baking sheet and freeze for at least 1 hour or until the ice cream is firm.

Add Toppings (Optional):

  • After freezing, dip the edges in mini chocolate chips, crushed Oreos, sprinkles, or any other toppings you desire. Freeze for an additional 15 minutes to set.

Serve & Enjoy:

  • Once firm, your Oreo Ice Cream Sandwiches are ready to be served. Enjoy immediately or store in the freezer for later!

Notes

  • Ice Cream Variations: You can use any ice cream flavor you like—vanilla, chocolate, cookies & cream, or even fruit-based sorbet.
  • Cookie Variations: For a fun twist, try using different Oreo flavors such as Golden Oreos, Mint Oreos, or Peanut Butter Oreos.
  • Make-Ahead: These sandwiches can be prepared ahead of time and stored in the freezer for up to a week. Just keep them in an airtight container to maintain freshness.
  • Topping Ideas: Get creative with toppings! Try adding crushed nuts, mini chocolate chips, sprinkles, or even drizzle with melted chocolate for extra indulgence.
  • Mini Versions: You can also make bite-sized sandwiches by using mini Oreo cookies and adjusting the ice cream portion.
