  • 1 ½ cups whipped cream store-bought or homemade
  • 2 tbsp powdered sugar optional, for homemade whipped cream

Instructions
 

Prepare the Graham Cracker Crust:

  • In a medium-sized bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well-coated. Press the mixture firmly into the bottom of a 9-inch springform pan. Use a spoon or the back of a glass to pack it down. Chill the crust in the refrigerator while you prepare the filling.

Make the Lemon Filling:

  • In a separate mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add the sweetened condensed milk and continue mixing until fully combined. Then, add the lemon juice, lemon zest, and vanilla extract. Mix well. Finally, add the heavy cream and beat for about 3 minutes until the mixture thickens slightly.

Assemble the Dolcini:

  • Pour the lemon filling over the chilled graham cracker crust. Spread it evenly with a spatula, smoothing the top.

Add the Whipped Topping:

  • Carefully spoon the whipped cream over the lemon filling and spread it evenly. For extra sweetness, you can mix a bit of powdered sugar into the whipped cream before adding it on top.

Chill and Set:

  • Cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight for the best results. This allows the Dolcini to set properly and enhances the flavor.
