Equipment

  • 1 medium saucepan
  • 1 Cheese grater
  • 1 stirring spoon
  • 1 Oven-safe baking dish (optional for broiling)
  • 1 Knife (for mincing garlic)

Ingredients

  • 1 cup 240ml Heavy Cream
  • 1 tablespoon Butter
  • 2 cloves Garlic minced
  • 1 cup 100g Mozzarella Cheese, grated
  • 1 cup 100g Provolone Cheese, grated
  • 1/2 cup 50g Parmesan Cheese, grated
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon Red Pepper Flakes optional
  • Fresh Parsley chopped (for garnish)
  • Bread Crostini, or Veggies for dipping (as needed)

Instructions

Prepare the ingredients:

  • Grate the mozzarella, provolone, and parmesan cheeses. Mince the garlic.

Melt the butter and garlic:

  • In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant (about 1-2 minutes).

Add cream and cheese:

  • Pour the heavy cream into the saucepan and bring to a gentle simmer. Gradually add the grated mozzarella, provolone, and parmesan cheeses, stirring constantly until the mixture is smooth and the cheese is fully melted.

Season:

  • Stir in the Italian seasoning and red pepper flakes. Taste and adjust the seasoning if necessary.

Serve:

  • Transfer the Fonduta to a serving dish or oven-safe bowl. Optional: place it under the broiler for 2-3 minutes to get a golden top. Garnish with fresh parsley and serve immediately with bread, crostini, or roasted veggies for dipping.

Notes

  • Storage: You can store leftover Fonduta in an airtight container in the refrigerator for up to 2 days. Reheat it gently on the stovetop or in the microwave.
  • Substitutes: Feel free to experiment with different cheese blends—Gouda or cheddar could work well in place of provolone, and Pecorino Romano can replace Parmesan for a sharper flavor.
  • Make it spicier: If you love heat, add more red pepper flakes or even some finely chopped jalapeños to the Fonduta mixture.
  • Broil for a golden top: If you like your Fonduta with a crispy, golden layer on top, place it under the broiler for a couple of minutes after transferring it to a dish. Just be sure to watch it closely!
