Equipment

  • Large stainless steel mixing bowl – Preferably stainless steel or food-safe plastic to withstand extreme cold.
  • Whisk or electric mixer – Helps blend ingredients evenly for a smooth base.
  • Wooden spoon or spatula – Useful for stirring while adding liquid nitrogen.
  • Insulated gloves – Protects hands from frostbite when handling liquid nitrogen.
  • Safety goggles – Shields your eyes from potential splashes.
  • Liquid nitrogen storage dewar or thermos – Used to safely store and pour liquid nitrogen.
  • Measuring cups and spoons – Ensures accurate ingredient proportions.
  • Serving bowls or cones – To enjoy your freshly made ice cream!

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ½ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1-2 liters liquid nitrogen

Optional Add-ins:

  • ¼ cup cocoa powder for chocolate flavor
  • ½ cup fruit purée for fruity ice cream
  • Crushed cookies nuts, or candy (for extra texture)

Instructions

Step 1: Prepare the Ice Cream Base

  • In a large mixing bowl, whisk together heavy cream, whole milk, sugar, and vanilla extract until the sugar dissolves.

Step 2: Put on Safety Gear

  • Wear insulated gloves and safety goggles before handling liquid nitrogen.
  • Ensure you are in a well-ventilated space and using a stainless steel or food-safe plastic bowl.

Step 3: Freeze the Mixture

  • Slowly pour a small amount of liquid nitrogen (about ½ cup) into the ice cream base while stirring continuously.
  • Keep adding small amounts of liquid nitrogen while whisking until the mixture thickens into a smooth, creamy ice cream.

Step 4: Add Mix-ins & Serve

  • If using mix-ins, gently fold them in once the ice cream reaches a scoopable texture.
  • Serve immediately in bowls or cones and enjoy your instant homemade ice cream! 🍨❄️

Notes

  • Safety First: Always handle liquid nitrogen with caution, using protective gloves and goggles.
  • No Storage: Liquid nitrogen ice cream is best eaten fresh—it tends to harden too much in the freezer.
  • Custom Flavors: Experiment with matcha, espresso, caramel, or fruit swirls for unique flavors.
  • Texture Tip: Stir continuously to ensure an even, creamy consistency.
