  • 1 tsp optional Vanilla Extract
  • 1 tbsp optional Coconut Oil (or other neutral oil)
  • Ice optional for additional firmness, as needed

Instructions
 

Prepare the Dates:

  • If the dates are not soft, soak them in warm water for 10-15 minutes. Drain them after soaking.

Blend the Ingredients:

  • Place the soaked dates, dairy-free milk, salt, and vanilla extract (if using) into a high-speed blender or food processor. Blend until the mixture is completely smooth. Add coconut oil (optional) and blend again until fully incorporated.

Freeze the Mixture:

  • Transfer the mixture to a shallow, freezer-safe container. If not using an ice cream maker, cover the container and place it in the freezer. Every 30 minutes, stir the mixture for the first 2 hours to prevent ice crystals and ensure a creamy consistency.

Churn (if using an ice cream maker):

  • If you have an ice cream maker, pour the mixture into the machine and churn according to the manufacturer's instructions. This typically takes about 20-30 minutes.

Serve:

  • Once the ice cream has reached a soft-serve or scoopable consistency, remove it from the freezer and let it soften for a few minutes. Scoop into bowls or cones and enjoy!

Notes

  • Adjust sweetness: You can reduce the number of dates if you prefer a less sweet ice cream. Dates are naturally sweet, so you may need fewer than you think!
