Equipment

  • 1 8x8-inch baking dish
  • 1 mixing bowl
  • 1 small bowl
  • (1) Whisk
  • 1 spoon
  • 1 measuring cup

Ingredients

For the Batter

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ¼ cup unsalted butter melted
  • 1 tsp vanilla extract

For the Topping

  • ½ cup brown sugar
  • ¼ cup unsweetened cocoa powder

The Magic Ingredient

  • 1 ½ cups hot water

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish.
  • In a mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt.
  • Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir to combine until you form a smooth batter.
  • Pour the batter into the prepared baking dish and spread it out evenly.
  • In a small bowl, mix the brown sugar and cocoa powder for the topping. Sprinkle it evenly over the batter. Do not stir.
  • Pour the hot water evenly over the top of the batter. Do not stir.
  • Bake for 35-40 minutes until the top is set, but the bottom remains gooey and fudgy.
  • Let the cobbler cool for 5-10 minutes, allowing the sauce to thicken slightly.
  • Serve warm with vanilla ice cream or whipped cream.

Notes

  • Do not stir the water into the batter after adding it. The hot water helps form the signature sauce that makes this cobbler so special.
  • You can make the batter and topping in advance, refrigerating it until ready to bake. Just add the hot water right before baking.
  • Store leftovers in an airtight container for up to 3 days in the refrigerator. You can reheat it in the microwave for a gooey, comforting treat!
  • For an extra touch, consider adding chopped nuts or chocolate chips to the batter for a richer texture.
