  • 1 measuring spoon set
  • 1 knife & cutting board (for chopping onions, optional)

Ingredients

Main Ingredients

  • 2 lbs 32 oz frozen hashbrowns, thawed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can 10.5 oz cream of chicken soup
  • 1/4 cup melted butter

  • 1/2 cup green bell pepper finely chopped (for a fresh twist)

Crunchy Topping (Optional, but Recommended!)

  • 1 cup crushed Ritz crackers or cornflakes
  • 2 tbsp melted butter

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish to prevent sticking.

Step 2: Mix the Ingredients

  • In a large mixing bowl, combine:
  • Thawed hashbrowns
  • Shredded cheddar cheese
  • Sour cream
  • Cream of chicken soup
  • Melted butter
  • Chopped onions
  • Salt and pepper
  • Stir everything until well combined.

Step 3: Assemble the Casserole

  • Pour the mixture into the prepared baking dish and spread it evenly.
  • (Optional) If using a crunchy topping, mix 1 cup crushed crackers or cornflakes with 2 tbsp melted butter and sprinkle it over the top.

Step 4: Bake the Casserole

  • Bake uncovered for 45-50 minutes, or until golden brown and bubbling.
  • If you like an extra crispy top, broil for the last 2-3 minutes—but watch carefully to prevent burning!

Step 5: Let It Rest & Serve

  • Remove from oven and let it rest for 5-10 minutes before serving.
  • Garnish with chopped parsley or green onions for a fresh touch.
  • Enjoy your homemade Cracker Barrel Casserole with your favorite sides!

Notes

  • Make-Ahead Tip: Prepare the casserole up to 24 hours in advance and store it in the fridge before baking.
  • Freezing Instructions: Assemble the casserole, wrap tightly, and freeze for up to 3 months. Thaw overnight in the fridge before baking.
  • Meat Variations: Add cooked ham, sausage, or shredded chicken for extra protein.
  • Vegetarian Option: Substitute cream of chicken soup with cream of mushroom or cream of celery soup.
  • Cheese Swap: Sharp cheddar works best, but you can also try Monterey Jack, Colby, or Pepper Jack for different flavors.
