Ingredients
  

For the Pie Crust: (Skip if using store-bought)

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter cold and cubed
  • 2 to 4 tablespoons ice water

For the Apple Filling:

  • 5 to 6 medium apples Granny Smith, Honeycrisp, or a mix, peeled, cored, and sliced thin
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons cornstarch

For the Streusel Topping:

  • ½ cup all-purpose flour
  • cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ cup unsalted butter melted
  • ¼ cup rolled oats optional

Instructions
 

Step 1: Prepare the Pie Crust

  • In a large bowl, whisk together flour and salt.
  • Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Add ice water, 1 tablespoon at a time, mixing until the dough comes together.
  • Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Roll out the dough on a floured surface and fit it into a 9-inch pie pan.
    Trim excess and crimp the edges. (Tip: Blind-bake for 10 minutes at 375°F for a crispier crust.)

Step 2: Make the Apple Filling

  • In a large bowl, combine sliced apples, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch.
  • Toss everything together until apples are evenly coated. Let sit for 10 minutes to allow flavors to develop.

Step 3: Prepare the Streusel Topping

  • In a medium bowl, mix flour, brown sugar, cinnamon, and oats (if using).
  • Pour in melted butter and mix with a fork until crumbly.

Step 4: Assemble and Bake

  • Preheat oven to 375°F (190°C).
  • Pour apple filling into the prepared pie crust, spreading evenly.
  • Sprinkle the streusel topping generously over the apples.
  • Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
  • Let the pie cool for at least 30 minutes before slicing.
