Ingredients
  

  • 2 cups cottage cheese full-fat or low-fat
  • 1/2 cup heavy cream or milk
  • 1/4 cup honey or maple syrup adjust to taste
  • 1 tsp vanilla extract optional
  • Pinch of salt optional

Instructions
 

Blend the Cottage Cheese Base

  • In a high-powered blender or food processor, combine the cottage cheese, heavy cream (or milk), honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until the mixture is completely smooth with no lumps. Taste the mixture and adjust sweetness if necessary.

Chill the Mixture

  • Pour the mixture into a bowl and cover it. Refrigerate for at least 1-2 hours to chill the base before freezing.

Churn in an Ice Cream Maker

  • If you're using an ice cream maker, follow the manufacturer's instructions. Pour the chilled mixture into the ice cream maker and churn for about 20-25 minutes, or until it reaches a soft-serve consistency.

OR

  • If you're not using an ice cream maker, pour the mixture into a freezer-safe container. Place it in the freezer and stir every 30 minutes for the first few hours to break up any ice crystals. This will help ensure a smooth texture.

Freeze

  • Once the ice cream has reached the desired consistency, transfer it to an airtight container and freeze for 2-3 more hours, or until firm.

Serve

  • Scoop and serve your cottage cheese ice cream with toppings of your choice, such as fresh fruit, chocolate drizzle, or nuts.
