Equipment

  • 1 10-inch Cast Iron Skillet (or oven-safe skillet)
  • 1 mixing bowl
  • (1) Whisk
  • 1 spatula
  • 1 Measuring Cup (for flour, sugar)
  • 1 Measuring Spoons (for salt, vanilla, baking soda)
  • 1 Hand Mixer or Stand Mixer (optional for creaming butter and sugar)

Ingredients

  • 1 ½ cups 180g All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • ½ cup 115g Unsalted butter, softened
  • ½ cup 100g Granulated sugar
  • ½ cup 100g Brown sugar, packed
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 1 ½ cups 240g Chocolate chips (semi-sweet or milk)

Optional Add-ins:

  • Crushed candy bars nuts (e.g., pecans, walnuts), toffee bits, etc.

Instructions

  • Preheat your oven to 350°F (175°C).
Grease your 10-inch cast iron skillet with butter or line it with parchment paper to prevent sticking.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
This should take about 2-3 minutes with a hand mixer.
  • Add the egg and vanilla extract, beating until smooth.
  • In a separate bowl, combine the flour, baking soda, and salt.
Sift them together to avoid clumps.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    Be careful not to overmix.
  • Fold in the chocolate chips (and any optional add-ins).
  • Transfer the dough into the prepared skillet, spreading it out evenly with a spatula.
  • Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs (it should still be a bit underbaked for the perfect gooey texture).
  • Allow the cookie to cool slightly in the skillet, then slice and serve warm with a scoop of ice cream or your favorite toppings.

Notes

  • Chilling the dough for 30 minutes before baking can improve the texture of your cookie, but it’s not necessary.
  • Customize your toppings by adding crushed candy, nuts, or swirls of caramel or peanut butter.
  • The cookie will continue to cook slightly after you remove it from the oven, so be careful not to overbake it if you want a gooey center.
  • Serve immediately for the best experience, but leftovers can be stored in an airtight container at room temperature for up to 3 days.
