For the Cookie Dough:
- 2 ¼ cups 280g All-purpose flour
- 1 tsp 5g Baking soda
- ½ tsp 2.5g Salt
- 1 cup 227g Unsalted butter, softened
- ½ cup 100g Brown sugar, packed
- ¼ cup 50g Granulated sugar
- 2 large Eggs
- ¼ cup 85g Honey
- 1 tsp 5mL Vanilla extract
- 1 tsp 2.5g Ground cinnamon
For the Cinnamon Glaze:
- 1 ½ cups 180g Powdered sugar
- 2 tbsp 30mL Milk
- 1 tsp 5mL Vanilla extract
- ½ tsp 1.25g Ground cinnamon
Prepare the Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
Cream the Butter and Sugars:
In a large bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy. This should take about 2-3 minutes.
Combine the Wet and Dry Ingredients:
Shape the Dough:
Using a cookie scoop or tablespoon, scoop the dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with your fingers or the back of a spoon.
Prepare the Glaze:
While the cookies are baking, whisk together the powdered sugar, milk, vanilla extract, and cinnamon in a small bowl until smooth and thickened.
- Chill the Dough: If you prefer thicker cookies, chill the dough for 30 minutes before baking. This will help the cookies maintain their shape.
- Adjust the Glaze: If you like a thicker glaze, add more powdered sugar. For a thinner glaze, add a bit more milk.
- Storage: Store any leftover cookies in an airtight container at room temperature for up to 3-4 days. For longer storage, freeze them for up to 3 months.
- Honey Alternatives: If you don't have honey, you can substitute with maple syrup or brown sugar syrup, although the flavor may vary slightly.
