Ingredients
  

  • 2 cups 480 ml Heavy Cream
  • 1 cup 240 ml Whole Milk
  • 3/4 cup 150 g Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Almond Extract
  • 1 tsp Citrus Zest orange or lemon
  • Blue Food Coloring a few drops to desired color
  • Optional: 1 tbsp Cornstarch if you want a smoother texture, optional for thickening

Instructions
 

Prepare the Base:

  • In a large mixing bowl, combine heavy cream, whole milk, and sugar. Stir well until the sugar is completely dissolved.

Add Flavoring:

  • Stir in the vanilla extract, almond extract, and citrus zest. Mix until everything is evenly incorporated.

Color the Mixture:

  • Add a few drops of blue food coloring and stir until you achieve your desired shade of blue.

Whip the Cream (Optional):

  • In a separate bowl, whip the heavy cream until stiff peaks form (optional, but recommended for a smoother texture).

Combine:

  • Gently fold the whipped cream into the milk and sugar mixture. Be careful not to deflate the whipped cream, as the air helps create the ice cream's texture.

Chill the Mixture:

  • Cover the bowl with a lid or plastic wrap, and refrigerate for at least 4 hours, or overnight if possible.

Churn or Freeze:

  • If using an ice cream maker, churn the mixture according to the manufacturer's instructions.
  • If making no-churn, pour the mixture into a shallow, freezer-safe container and freeze. Every 30 minutes, stir the mixture with a fork or spoon to break up ice crystals and improve texture. Repeat for about 3-4 hours until it reaches a creamy consistency.

Serve:

  • Once the ice cream is fully set, scoop and serve in bowls or cones. Enjoy!

  • For a smoother texture, try whipping the cream separately before folding it into the mixture.
