Equipment

  • 1 High-Powered Blender or Food Processor
  • 1 Airtight Freezer-Safe Container (if freezing)
  • 1 Silicone Spatula (for scraping down the sides)
  • 1 Ice Cream Scoop (for serving)

Ingredients

Main Ingredients:

  • 2 large ripe bananas sliced and frozen
  • 1 ½ cups mixed berries strawberries, blueberries, raspberries, or blackberries, frozen
  • ½ teaspoon vanilla extract optional for extra flavor

Optional Add-Ins:

  • 1-2 tablespoons honey or maple syrup if you prefer a sweeter ice cream
  • ¼ cup coconut milk or Greek yogurt for extra creaminess
  • 1 tablespoon nut butter almond, peanut, or cashew for a nutty flavor
  • 1 tablespoon cacao nibs or dark chocolate chips for a chocolatey crunch

Instructions

Step 1: Prepare the Ingredients

  • Slice the ripe bananas and spread them on a baking sheet.
  • Add the mixed berries and freeze everything for at least 2-3 hours, or overnight for best results.

Step 2: Blend Until Creamy

  • Add the frozen bananas and berries to a high-powered blender or food processor.
  • Pour in vanilla extract and any optional ingredients like honey or coconut milk.
  • Blend on high speed, pausing to scrape down the sides as needed. If the mixture is too thick, add a small splash of coconut milk or yogurt to help blend.

Step 3: Serve or Freeze

  • For soft-serve: Serve immediately for a creamy, fresh treat.
  • For firmer ice cream: Transfer the mixture to a freezer-safe container and smooth the top. Cover and freeze for 1-2 hours for a scoopable texture.

Step 4: Enjoy!

  • Scoop into bowls or cones and top with fresh fruit, granola, nuts, or a drizzle of melted chocolate for extra flavor.

Notes

  • For a richer texture, add a splash of full-fat coconut milk or Greek yogurt while blending.
  • To prevent ice crystals, press a piece of parchment paper or plastic wrap directly onto the surface before freezing.
  • Want a tropical twist? Swap berries for mango and pineapple for a fruity variation.
  • Make it protein-packed by adding a scoop of vanilla protein powder or a tablespoon of nut butter.
